If
you've done any amount of searching on the web for Key Lime Pie
Recipes, you'll find that there are many variations. Some don't
even use eggs! I'm sorry, but I can't call it a Key Lime Pie if
there are no eggs in it. It's just wrong!
So,
what I've set out to do is give you, what I feel, are the best
tasting Key Lime Pie Recipes. Not only am I giving you the recipe,
I'm going to make it as well. After all, nothing tastes good on
paper. You've got to try it for yourself!
As
I find time to bake these delicious deserts, I will put up a new
page for each recipe and give my review.
One
of the first things to remember is that there is a difference
between the typical green Limes that you see all the time at your
grocery store. A Key Lime is a little smaller than a golf ball
and has a much more tart flavor.

As
you can see, there's a pretty good size difference. This little
lime packs quite a punch. The Persian Lime doesn't taste the same
and does not make a good substitute for a Key Lime.
Here
in South Florida, I don't have too much trouble finding these
at my local grocery store (Publix). But I've heard that in other
parts of the country, such as the mid-west, it's a little harder.
You may have to look in the ethnic foods section to find these
little gems.
Their
season can be classified as year-round but the main season runs
from June-September. Just in time for the summer!
